Maple and Mustard Glazed Ham

Ingredients
- 750 g rolled gammon
- 1 cinnamon stick
- 1 tsp peppercorns
- 1 tsp coriander seeds
- 35 whole cloves
- 100 ml maple syrup
- 1 tbsp whole grain mustard
- 1 tbsp Worcestershire sauce
- 1 tbsp soy sauce
Directions
Place a 750 g rolled gammon in a large pan and cover with cold water. Add 1 cinnamon stick , 1 tsp peppercorns , 1 tsp coriander seeds , and 15 whole cloves . Bring to the boil and then simmer for about 40 minutes.
Drain the water away and let the boiled ham cool a little. Cut away any skin from the ham leaving a layer of fat behind. Score the fat into a diamond pattern. Stud a clove into each cross (you will need approximately 20 whole cloves for this).
Make up the glaze by placing 100 ml maple syrup , 1 tbsp whole grain mustard , 1 tbsp Worcestershire sauce , and 1 tbsp soy sauce in a jug and mix well. Place the ham into a roasting tin and pour half the glaze over it.
Roast the ham for 20 minutes at Gas Mark 5 then pour the rest of the glaze over the ham and roast for a further 20 minutes.
Carve and serve. Left over meat will keep for a few days in the fridge and is wonderful in sandwiches!
