- 1 pumpkin
- 1 tbsp olive oil
Thourougly wash the seeds from 1 pumpkin and separate them from any remaining pith. Dry the seeds as well as you can using kitchen roll then lay them out on fresh kitchen roll to dry. Ideally you should leave them overnight but if you are in a rush then leave them for at least 2 hours in the full sun.
Line a roasting tin with silver foil and add 1 tbsp olive oil . Add the dried pumpkin seeds to the pan and make sure they are all coated in the oil.
Roast the seeds for an hour and a half on 120C. Whilst they are cooking occasionally move them around so that they remain coated in oil which prevents them from burning.
