Cranberry and Orange Muffins

Ingredients

  • 4 oz fresh cranberries
  • 4 floz orange juice
  • 4 oz unsalted butter
  • 4 oz granulated sugar
  • 1 orange
  • 2 large eggs
  • 7 oz plain flour
  • 1/4 tsp salt
  • 2 tsp baking powder
  • 4 floz milk

Directions

Place 4 oz fresh cranberries in a small pan with 4 floz orange juice and heat gently until the the juice just starts to simmer. Remove from the heat and allow to cool.

Cream 4 oz unsalted butter with 4 oz granulated sugar and the grated rind of 1 orange . Beat 2 large eggs into the butter. Gently fold in 7 oz plain flour , 1/4 tsp salt and 2 tsp baking powder along with 4 floz milk until everything is well combined. Fold in the cooled cranberries and orange juice to form a batter.

Divide the batter evenly between 12 muffin cases, springle some granulated sugar over each muffin, and then bake in the oven at 190C for about 25-30 minutes or until golden brown.
