- 250 g shallots
- 100 g Parma ham
- 650 g sprouts
- 1 tbsp olive oil
Peel and halve 250 g shallots , tear 100 g Parma ham into pieces and halve 650 g sprouts removing the outer leaves.
Heat 1 tbsp olive oil in a frying pan and fry the shallots until golden, then tip into a bowl. In the same pan fry the ham until crisp, then tip into the bowl with the shallots.
Meanwhile cover the sprouts with cold water and cook until almost tender. Drain the shallots into a colander and refesh under cold running water.
Tip the sprouts into the same frying pan as before and cook over a high heat for about 4 minutes. Stir the shallots and ham into the sprouts and cook for a further minute before serving.
