- 8 oz unsalted butter
- 8 oz caster sugar
- 6 tbsp honey
- 4 eggs
- 1/2 tsb vanilla essence
- 10 oz plain flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 7 oz icing sugar
- 3 tbsp milk
In a large bowl beat together 8 oz unsalted butter , 8 oz caster sugar , and 5 tbsp honey . In a small bowl gently whisk together 4 eggs . Using a wooden spoon beat the eggs into the butter. Once well beaten add 1/2 tsb vanilla essence . Now gently fold in 10 oz plain flour , 1 1/2 tsp baking powder , and 1/2 tsp salt .
Use cake release to line enough muffin tins to hold 18 muffins. Divide the mixture evenly between the 18 muffin tins. Bake at 150C for approaximately 20-30 minutes or until a skewer inserted in the centre of a muffin comes out clean.
leave to cool for a couple of minutes and then turn the muffins out upside down onto a cooling rack. It is important that you actually cool the muffins upside down so as not to leave any marks on the flat bottom of each muffin.
Once the muffins are cold use a bread knife to cut the rounded top of each muffin and return to the cooling rack upside down.
Now make the icing by beating together 7 oz icing sugar , 1 tbsp honey , and 3 tbsp milk . Using a small spoon driszzle the icing over the upturned bottoms of each muffin allowing it to run slowly down the sides. Allow the icing time to set before serving.
For an extra little touch you can decorate each cake with a sugar icing bee. You can probably buy these ready made but I find it just as easy to make them using tubes of black, white, and yellow writing icing. If using then add the bees when the icing is still wet in order for them to stick properly.
