- 200 g dark chocolate
- 100 g unsalted butter
- 250 g caster sugar
- 1 tsp vanilla extract
- 4 eggs
- 60 g plain flour
- 60 g cocoa powder
Pre-heat the oven to 180C. Grease and line a rectangular cake tin with greaseproof paper.
Break 200 g dark chocolate into a bowl and melt gently over a pan of simmering water. Cream together 100 g unsalted butter , 250 g caster sugar , and 1 tsp vanilla extract using an electric whisk until pale and fluffy. Lightly beat 4 eggs and then slowly whisk them into the butter mixture until smooth and creamy. Stir in 60 g plain flour and 60 g cocoa powder and then the melted chocolate ensuring everything is evenly mixed.
Spoon the mixture into the cake tin and cook for 18-20 minutes. Remove from the oven while it is still gooey and leave it to cool and set in the tin. Once cooled remove from the tin and cut into 12 pieces.
