Whole Roasted Cauliflower with Cheese Sauce

  • 1 cauliflower
  • 350 ml white wine
  • 2 bay leaves
  • 1 tbsp black pepercorns
  • 1 garlic bulb
  • 1 egg
  • 4 tbsp parmesan
  • 1 banana shallot
  • 300 g extra mature cheddar
  • 125 ml double cream
  • 2 spring onions
  • 1 green chili


Trim most of the leaves from 1 cauliflower and place it in a large saucepan with 300 ml white wine , 2 bay leaves , 1 tbsp black pepercorns , and 1 garlic bulb cut in half horizontally. Add boiling water to just cover the cauliflower. Simmer for 20 minutes turning the cauliflower over half way through cooking.

Lift the cauliflower out of the water into a colander and allow to steam dry for 10 minutes. Once dry put the cauliflower into a roasting tin and brush all over with 1 egg beaten. Grate a generous amount of parmesan cheese (approximately 4 tbsp parmesan ) over the top and sides of the cauliflower and then roast for 15-20 minutes until golden.

Meanwhile finely chop 1 banana shallot and gently fry in oil for around 5 minutes until soft. Add 50 ml white wine and bubble until evaporated by two thirds. Turn the heat right down and add 300 g extra mature cheddar (grated) and 125 ml double cream stirring constantly until the cheese melts to produce a smooth sauce. Remove from the heat and stir through 2 spring onions (finely sliced) and 1 green chili (finely chopped), pour into a jug and serve with the cauliflower.
