Sage and Sausage Pasta

Ingredients

  • 6 pork sausages
  • 400 g tinned cherry tomatoes
  • 1 handful fresh sage
  • 1 tbsp olive oil
  • 200 g fusilli
  • 2 handful grated parmesan

Directions

Preheat the oven to Gas Mark 6. Slit 6 pork sausages lengthways so that you can remove their skins. Break each sausage into four and form into rough balls. Place the sausage balls into a roasting tin along with 400 g tinned cherry tomatoes and 1 handful fresh sage (if you don't have fresh sage you can use 1 tsp of dried instead). Finally drizzle 1 tbsp olive oil over everything.

Roast in the oven for 20 minutes or until the sausage meat is cooked through. Meanwhile cook 200 g fusilli in boiling water. Drain the pasta and then mix in the cooked sausages and tomatoes.

Serve along with 2 handful grated parmesan for sprinkling over the top.
