Tagliatelle alla Carbonara

Ingredients

  • 1 onion
  • 8 rashers smoked bacon
  • 25 g butter
  • 3 eggs
  • 150 ml double cream
  • 250 g fresh tagliatelle

Directions

Finely chop 1 onion and roughly chop 8 rashers smoked bacon . Melt 25 g butter in a saucepan and gently cook the onion and bacon until the onion is soft and the bacon is cooked.

In a small bowl beat 3 eggs together with 150 ml double cream . Add the eggs and cream to the pan. Stir once every 30 seconds or so so that the eggs cook but don't become an omelette.

While the egg mixture is cooking, cook 250 g fresh tagliatelle in boiling water for 4 minutes. Drain the pasta add the sauce and mix well before serving.
