Tagliatelle with Parsnip and Smoked Bacon

Ingredients

  • 4 parsnips
  • 8 rashers smoked bacon
  • 75 g butter
  • 1 tsp fresh thyme
  • 250 g fresh tagliatelle
  • 75 g Parmesan cheese

Directions

Peel 4 parsnips and cut into thin strips and roughly chop 8 rashers smoked bacon . Melt 50 g butter in a frying pan and gently fry the parsnips, bacon and 1 tsp fresh thyme for about 10 minutes until the bacon is cooked and the parsnips are soft. Whilst cooking the bacon and parsnips also cook 250 g fresh tagliatelle (usually 4 minutes in boiling water) and finely grate 75 g Parmesan cheese .

Drain the pasta and toss with the cooked parsnips and bacon, the grated Parmesan cheese and 25 g butter .
