Tuna Melt Muffins

Ingredients
- 200 g tinned tuna
- 1 spring onion
- 1 stick celery
- 1 tomato
- 1 tsp dried oregano
- 2 tbsp mayonnaise
- 65 g mature cheddar cheese
- 2 muffins
Directions
Drain the oil from 200 g tinned tuna and flake the tuna into a mixing bowl. Chop 1 spring onion , 1 stick celery and 1 tomato (I tend to quarter the tomatoes, remove the seeds and then chop the flesh) and mix with the tuna along with 1 tsp dried oregano . Bind the mixture together with 2 tbsp mayonnaise . Grate 65 g mature cheddar cheese into a separate bowl.
Cut 2 muffins in half and toast the cut sides under a grill until golden. Split the tuna mixture evenly between the 4 half muffins and then top with the grated cheese. Grill the muffins until the cheese has melted and is bubbling.
