Egg and Prawn Risotto

Ingredients
- 4 rashers smoked bacon
- 1 onion
- 1 green pepper
- 4 oz butter
- 14 floz long grain rice
- 1 1/4 pint chicken stock
- 1/4 pint dry white wine
- 4 eggs
- 6 oz king prawns
- 2 oz parmesan
Directions
Chop 4 rashers smoked bacon , 1 onion , and 1 green pepper and fry them in 4 oz butter until the onion is soft and golden. Stir in 14 floz long grain rice and fry for 2 minutes. Carefully pour in 1 1/4 pint chicken stock and 1/4 pint dry white wine . Bring to the boil, cover and simmer until the rice is tender and the liquid has been absorbed. This will take about 20 minutes.
While the rice is cooking hard boil 4 eggs .
Shell and chop the eggs and shell 6 oz king prawns . Once the rice is cooked fold in the prawns and chopped egg and gently heat through. Finely grate 2 oz parmesan and stir it into the rice just before serving.
