Bean Sprouts with Shredded Pork

Ingredients

  • 350 g lean pork
  • 2 tbsp cornflour
  • 2 tbsp soy sauce
  • 1 tbsp sherry
  • 1 inch root ginger
  • 2 spring onions
  • 2 tbsp oil
  • 1 tsp salt
  • 200 g bean sprouts
  • 100 g baby leaks

Directions

Shred 350 g lean pork into a bowl. Sprinkle over 2 tbsp cornflour , 2 tbsp soy sauce , and 1 tbsp sherry and mix well. Leave to marinate for 20 minutes.

Peel and shred 1 inch root ginger and 2 spring onions . Heat 1 tbsp oil in a wok and gently fry the ginger and spring onions for 1 minute and then add the pork and fry until cooked. Use a slotted spoon to remove the pork, ginger, and spring onions to a bowl.

Add another 1 tbsp oil to the wok along with 1 tsp salt , then add 200 g bean sprouts , and 100 g baby leaks (slice diagonally). Stir fry for about 2 minutes then return the pork etc. to the pan and cook for another minute to ensure everything is piping hot.

Serve with rice.
