Chicken Chow Mein

Ingredients

  • 150 g noodles
  • 2 chicken breasts
  • 3 tbsp dark soy sauce
  • 1 tbsp dry sherry
  • 1 tbsp sesame oil
  • 4 tbsp vegetable oil
  • 100 g mangetout
  • 120 g beansprouts
  • 50 g ham

Directions

Place 150 g noodles in a bowl and cover with boiling water. Allow to stand for about four minutes and then drain and leave to one side.

Slice 2 chicken breasts into small shreds and place in a bowl with 2 tbsp dark soy sauce , 1 tbsp dry sherry , and 1 tbsp sesame oil .

Heat 2 tbsp vegetable oil in a wok until it starts to smoke then add the chicken mixture and cook for about 3 minutes. Once cooked transfer to a bowl and keep warm.

Heat another 2 tbsp vegetable oil in the same wok and add 100 g mangetout , 120 g beansprouts , and 50 g ham cut into 1cm squares. Cook the vegetables for a minute or so and then add the noodles. Continue to cook until the noodles are heated through then add 1 tbsp dark soy sauce and the chicken mixture. Cook for another minute and then serve.
