Smoky Roasted Salsa

Ingredients
- 150 g cherry tomatoes
- 1/2 tsp brown sugar
- 1 tbsp balsamic vinegar
- 2 tbsp olive oil
- 2 roasted red peppers
- 1 red chilli
- 1 clove garlic
- 1/2 tsp paprika
Directions
Preheat the oven to 200C.
Halve 150 g cherry tomatoes and place on a baking tray. Sprinkle over 1/2 tsp brown sugar and drizzle with 1 tbsp balsamic vinegar and 1 tbsp olive oil . Roast for 20 minutes then leave to cool.
Place the tomatoes with 2 roasted red peppers (from a jar is fine), 1 red chilli (deseeded), 1 clove garlic , 1/2 tsp paprika , 1 tbsp olive oil , and some seasoning. Blitz to produce a coarse sauce.
